Dried limes, also know as Lemon Onmani, are a stable source of citrus for your kitchen. Dried limes can be grounded and used as a seasoning, or can be added whole to stews, marinades, or sauces to impart a tart, pungent dimension; a few pricks with a knife allow the cooking liquid to permeate the fruit, hydrating it and releasing its complex flavors.
