Gumbo File is ground sassafras leaves. In traditional Creole and Cajun cuisines of Louisiana, gumbo filé powder is used for its subtle flavor and to thicken stews and soups. As a thickener it can be used on its own or in addition to roux and okra. It adds a delicious flavor to any pot or bowl of Gumbo. Gumbo file is usually added at the end or can be added directly in to individual bowls.
